Arugula & Pear Salad

Arugula is a favorite of ours & being that it is a bit tricky (at least for us) to grow hydroponically, we celebrate its arrival every season! Here is our favorite salad recipe for it.

  • 1/4 cup walnut halves

  • 2-3 cups of baby arugula

  • 1/2 Bosc or Anjou pear, diced

  • 1 Tablespoon lemon juice

  • 1-1/2 Tablespoon extra-virgin olive oil

  • Salt & pepper, to taste

  • 4 oz Blue Cheese or Gorgonzola, crumbled

    Toast walnut halves over medium heat and cool. Arrange the baby arugula on plates. Sprinkle the diced pear, walnuts & crumbled cheese on top of the salad. Before serving, whisk together the lemon juice, oil & salt. Drizzle evenly over salads. Pepper to taste.

    Note: Canned pears can be used in a pinch but are definitely sub-par to fresh pears.
