Green Monster Smoothie
With the summer heating up & the growing season winding down, we are reminded again that “Local is Seasonal”. We’ve gotten kind of spoiled — thanks to imports, we can buy almost anything, anytime. But honestly, it’s made us forget how amazing food can actually taste. There’s just nothing like the flavor of fresh, seasonal produce. Maybe we’d value our food more if it were only available when nature intended.
Our Fuyu Persimmon tree bears its fruit in October. Every year, we eagerly await the fruit to ripen. Then we gorge ourselves on it, till we have our fill. So, though we miss our produce terribly out of season, it has our taste buds anticipating the next one.
Anyway, we are turning to kale these days for our greens. We dug out this old recipe from the archives last week & want to share it with you.
Green Monster Smoothie
2 servings
4 cups of chopped kale
1 cup milk (or dairy replacement)
1/2 cup plain yogurt
2 frozen bananas (or more for sweeter)
2 Tablespoons peanut butter (or other nut butter)
Blend all ingredients until smooth. Enjoy immediately!
