Nana’s Giant Blueberry Muffins

My sweet mother-in-law was truly a wonderful baker. Lately, I’ve been going through her recipes… one by one…and baking through them. It’s been super fun. Some we keep. Some we let go. One we will have framed.

Back when we were working long days on the farm, she would often surprise us with something warm & delicious to boost our spirits. Her giant blueberry muffins were always a favorite—they could turn even the hardest day around. When it was this recipe’s turn, we all cheered. And now, we want to pass it on. Here you go!

Nana’s Giant Blueberry Muffins

Yield: 12 muffins

  • 2 eggs

  • 1 cup milk

  • 1/2 cup vegetable oil

  • 3 c flour

  • 1-1/2 c sugar

  • 4 tsp baking powder

  • 1 tsp salt

  • 2 c blueberries

Preheat oven 400 degrees.

Grease the bottom of a muffin tin. Beat eggs with a fork. Stir in milk & oil.

Blend the dry ingredients together & add to the wet ingredients little by little until just blended. Add blueberries. Evenly distribute the batter into 12 muffins.

Bake for 20-25 minutes.
